Minted Mash

Preparation Time: 10 minutes
Cooking Time: 20 minutes
Serves: 6 people

Mashed potato at any time of the year is most welcome in my household and combining it with fresh mint merges is a special treat. It is quick and easy to make and will easily re heat in the microwave should you wish to make it in advance. My little chef’s secret is to use a ricer to avoid undesirable lumps. Adding margarine, olive oil and seasoning well with salt and freshly ground black pepper or a pinch of nutmeg help to maximise the flavour and enjoyment.

Method

  1. Heat a large saucepan of boiling water.
  2. Cook the potatoes until soft. Drain well.
  3. Mash the potato using a masher or fork. Return the mashed potato to the saucepan.
  4. Stir in the margarine while the potato is still hot.
  5. Add the chopped mint and season well.
