MINCED MEAT MIXTURE
Note: 1lb (450g) minced meat will serve 4-5
Recipe is for 5lbs (2.25kg) Meat
Ingredients
5lbs (2.25Kg) shoulder steak, chuck or top rib mince
5 teasp salt
1/2 teasp white pepper
5 large eggs
2 large onions
1 tbsp soya sauce
5oz (150g) or 5 heaped table spoons of Medium Matzo Meal

Grate onion, add to eggs and seasonings
BY BLENDER OR FOOD PROCESSOR
Put onions, eggs and seasoning into machine and process until smooth
Put egg mixture into bowl and stir in the Matzo Meal.
Now add the minced meat and stir with a large fork or well scrubbed hands until thoroughly mixed.
Leave for a least half an hour for the Matzo Meal to swell.
The mixture can now be shaped into beef burgers about 3 inches across and 3/4 inch thick.
Or
Meat Balls the size of a lemon.
Put the beef burgers or meat balls onto a tray and open freeze until firm.
Use as required for grilling, frying, or stewing.
