MATZO PUDDING
Serves 6
Ingredients
4 Matzo Crackers
4oz (125g) dried apricots
1 cooking apple, peeled and coarsely grated
3oz (75g) caster sugar
20z (50g) chopped walnuts (optional)
1 1/2 teasp cinnamon
1 rounded tbsp Apricot Jam or Marmalade
Juice and grated rind of 1/2 lemon
3oz (75g) margarine (melted)
3 eggs (whisked until thick)
3 level tbsp Fine Matzo Meal
Recipe
A richly flavoured mixture than can be served ether hot or cold.
Note: If a Passover pack is available, a cupful of raisins can be used instead of dried raisins.
Set the Oven at Gas No 4, 350 F, 180 C
Grease a tin or baking dish about 8 inches (20cm) square and 2—3 inches (6-7cm) deep.
Pour boiling water over the apricots and leave for about 10 minutes then drain and cut up into small pieces
Pour cold water over the broken up matzos in a mixing bowl and leave for 10 minutes, drain well and then beat with a fork until smooth.
With the exception of the Margarine, add all the ingredients to the Matzos in the order given, beating well, then stir in half the melted margarine. Turn into baking dish, then drizzle the remaining margarine over the top, and sprinkle with granulated sugar.
Bake for approx. 1 hour or until a knife inserted in the centre comes out clean.
