POTATO LATKES

Non-Dairy Version

 Serves 4—6 People

Ingredients

4 Large Potatoes (1 Pint, 450ml, 2 Cups When Drained)

1/4 Medium Onion

2 Large Eggs

4 Level tbsp Cake or Fine Matzo Meal

1 Level teasp Salt

1 Level teasp baking powder

Pinch White Pepper

 

Recipe

Grate the potatoes by hand or on a food processor, then turn into a sieve and leave to drain for 15 minutes.

Whisk the eggs with the seasoning, then stir in the onion, potatoes, matzo meal and baking powder.

In a large frying pan put oil to the depth of 1/2 inch. Put over moderate heat and when a teasp of the mixture sizzles when it is put into the pan, put tablespoons of the mixture into the oil, flattening each latkes with the back of a spoon, so it will cook evenly.

Fry  at a steady bubble until a rich brown then turn and fry the second side. Drain on crumpled tissue paper, then serve piping hot.
